Recipe | Orange and Turmeric Loaf Cake ft. Indigo Herbs*.

I love cake. There's no denying this. So when Indigo Herbs got in touch with me and asked me if I could put together some recipes with some of their products, I just knew cake would have to be in there somewhere. Cue my latest creation - a vegan friendly orange and turmeric loaf cake.

Turmeric is not an ingredient I typically use, so when it arrived in my bundle I did scratch my head for a minute or two. I know it can be used in curries and other colourful, Indian style dishes, but I wanted to create something a little different. And then it came to me, I wonder if you can use turmeric in a cake?

Turmeric itself is a plant from the same family as ginger. The root of the plant is ground up to produce a gorgeous orange powder that along with being used in food is traditionally used in Indian and Chinese herbal medicine in to treat inflammation. But today, I'm going to pair it with some zesty orange to create a delicious afternoon treat.

So, let's get down to business hey? How about I tell you what you gotta do to create this scrumptious cake?

WHAT YOU'LL NEED:

♥ 250g self raising flour
♥ 150g caster sugar
♥ 1/2 tsp baking powder
♥ 1/2 tsp bicarbonate of soda
♥ Juice and greated zest of 1 orange
♥ 100ml flavourless oil
♥ 200ml non-dairy milk

WHAT TO DO:

♥ Pre-heat the oven to 180°c and grease or line a loaf tin.
♥ Measure out all the dry ingredients (excluding orange zest), add to a large mixing bowl and stir up.
♥ Measure out the milk and oil and add the juice and zest of the orange to this.
♥ Add the wet ingredients to the dry ingredients, stir briefly until just combined.
♥ Pop the mix into the loaf tin and place it in the oven for around 35 minutes.

I have to say that I really am a fan of vegan baking, there's so much less fuss to it. None of this beating butter and sugar and slowly adding to egg to stop your cake looking like baby sick, It's just bish, bash, bosh, done. This vegan recipe makes for a deliciously moist, zesty loaf that you cannot just have one slice of. I've made two now and they've both been devoured in less than a day. The orange and turmeric work delightfully together and the quantity in this cake, I think, is just enough to add a depth of flavour without being overpowering. And just look at the colour, who doesn't love an orange cake?!

  1. I keep reading that tumeric is so good for you and can be an ingredient in cakes, I always use it in my curries! Thank you for the recipe will definitely give this a try!

  2. I made your delicious cake yesterday, and the result was fabulously moist and yummy. I tried almond milk, because I'd read somewhere it gives a nice texture to cakes. I tested it on several friends and they asked for the recipe! I am looking for a gluten as well as egg-free recipe, do you think this could be made to accommodate a gluten free diet (I have a friend who is celiac). If so, any recommendations on what to use instead of white flour?

    1. Oh my goodness, I'm so happy that you and your friends loved the cake. I reckon swapping the flour for a gluten free alternative should work ok, I don't see why it wouldn't! It makes me so happy to hear that people have recreated my recipes so thank you!
