Soup-er Soup.

I love soup. I honestly think it's one of the easiest and most comforting things to eat in the winter months. So today I thought I'd share some yummy sounding (and looking) veggie soup recipes that I found on Pinterest, along with a one of my own current favourites (that admittedly doesn't look as Pinterest worthy).

Don't they all just look flipping amazing! I want to climb into my computer screen and scoff them all. With that said, here's my not-so-pretty-looking but pretty tasty Broccoli and Stilton soup recipe. This is vegetarian friendly (although obviously not vegan), beyond easy and I literally cannot get enough of it.

What you'll need:
> 1 head of broccoli (stalk included)
> 1 onion
> 1-2 cloves of garlic
> 1 leek
> 2-3 medium potatoes
> 1 litre vegetable stock
> stilton cheese (as much or as little as you like)

What to do:
1. Peel, chop and fry off the onion, leek and garlic until softened.
2. Peel and chop the potatoes and add in.
3. Chop your broccoli and add the stalk into the pan along with the veg stock. Simmer for 15 minutes until the potatoes and stalk are softened.
4. Add the broccoli trees to the top of the soup, pop a lid on and steam for 5 minutes or so until softened.
5. Carefully blitz until smooth.
6. Crumble up the stilton cheese and stir into the soup. Season to taste.

And there you have it, told you it was easy.

I like to top mine with a bit of crumbled stilton and 'fake-on' (bacon crumbles that are delicious and have never seen a pig and are therefore vegan friendly!)
