Recipe | Vegan 'Cheese' Sauce.

I love cheese, but given that dairy isn't my friend and I'm trying to lean more towards a dairy free lifestyle as much as I possibly can, eating a huge bowl of traditional mac and cheese is kind of off the cards. But fear not, you can create a delicious 'cheese' sauce alternative with no dairy in sight. So technically it's not really a cheese sauce at all, but we'll call it that just to keep things simple.




What You'll Need:
1 large potato
1 large carrot
Handful of cashew nuts (soaked in water for at least 30 mins and drained)
1 tbsp lemon juice (fresh is best)
3 tbsp Oatly creamy oat
1/2 tsp asafoetida (or you could just add onion)
1/2 tsp smoked paprika (for a smoked 'cheese' effect)
1 garlic clove



What To Do:
1. Peel and chop your potato, carrot and garlic clove. Place in a saucepan with some water and boil until soft.
2. Once cooked, drain the veg and save the cooking water.
3. Place the veg, a cup of the cooking water and the rest of the ingredients into a blender.
4. Blitz until smooth.
5. Smother over pasta, cauliflower or whatever else you fancy.


I find it ever so slightly hilarious that this looks like full on artificial, not-very-good-for-you cheese sauce, when actually, there's nothing artificial or bad-for-you about it!     I'm not normally a fan of "replacement" foods, but this cheese sauce looks like a really great idea - there's something about cheese that makes it too tasty to give up! Do you find this sauce is a good likeness to that of macaroni cheese?

    1. Me neither, the only 'replacement' food I will generally eat is Linda McCartney sausages, but I find the idea of quorn 'chicken breasts' a bit odd! You can tell it isn't cheese, but the texture and taste isn't too dissimilar, considering there's not a whiff of cheese in it! x
