Recipe | Kale Pesto.

Let me let you all into a little secret....I am crap at keeping plants alive. I just can't seem to manage it. So anyway, this is relevant because although I've tried to grow my own basil so that I can make reams of homemade pesto, I've failed far too many times. So that led me to a bit of experimentation to whip up my own pesto with something that is more readily available in my fridge....good ol' kale.

What you'll need:
> Olive Oil (or any other oil you fancy)
> Kale 
> Garlic (chopped)
> Nuts (I used a mix of cashews and walnuts)
> Cheese (I used lactofree, you could use nutritional yeast or vegan cheese to make it vegan friendly)
> Lemon Juice

What you do:
> I started by lighly toasting the nuts for a few minutes in a dry pan.
> Then add your kale, garlic, nuts, lemon juice and cheese to a blender and switch on.
> Whilst it's blending gradually pour in enough oil to moisten the mixture, you can go as wild as you like here!

VOILA!

There you have you very own, super simple kale pesto. I've found it works a treat with pasta, it tastes delicious, you know exactly what went into it and it's whipped up quicker than you can go to the shop and buy it!
