DIY | Sugar-free Soy Caramel Latte.

I've recently discovered (and become rather addicted to) Costa's sugar free soy caramel lattes. I'm sure I'm probably the last person to jump on this bandwagon, but I am not usually one for taking coffee related risks, especially as coffee from places like Costa and Starbucks can be quite expensive. However, a few weeks ago I decided to throw caution to the wind and just try it...and as I'm sure you've already guess I bloody loved it! As I've already touched on, although delicious, these snazzy coffees can be a little pricey, so I set about making my own at home for a fraction of the cost.

What you'll need:
> Unsweetened Soy Milk
> Sugar-free Caramel Syrup (I like Jordan's Skinny Syrups, which you can find in TK Maxx or online at TRKG)
> Coffee - I use mine straight from the coffee machine
> A little milk frother thing (I got mine from Ikea)
> A microwave

The major trick with this is to a) not overheat the soy milk and b) make sure your coffee isn't too hot as you don't want a curdled soy milk situation on your hands - it's not pretty and doesn't make for a nice, relaxing beverage.

What you need to do:
> Pop about 150ml soy milk in a jug and heat for approx 1:30, stopping every 30 seconds to check it and give it a wee froth with your frother gadget - like I said before, you don't want it to get too hot!
> In the mean time, get your coffee a brewing and pop some yummy caramel syrup in your cup along with any other sweetening product you wish.
> Once you milk is warm and frothed, pop it in your cup until it's about 3/4 full, making sure you get plenty that lovely froth in too! Give it a stir to mix in your syrup.
> Finally add in your coffee and give it another cheeky little stir - all being well it should be perfectly un-curdled and you can now put your feet up and enjoy!

Once you get the technique on fleek, this really is super easy and makes for a delicious coffee at a fraction of the price you would pay in a coffee shop.
