Are You Having A Fa-LAUGH-el?

Since making the transition to a veggie diet, I've definitely found I've needed to get a little more creative in the kitchen. I'd never tried falafel before, but on a quest to make sure I'm still getting plenty of protein I decided to give them a try. Seeing as this week is National Vegetarian Week, I thought it was about time I got my recipe up so you can all make some delicious veggie treats!

Now I'm going admit that prior to making falafel I literally had no idea what went into them, none whatsoever. But seriously, this recipe is so simple, takes less than 20 minutes to whip up and is delicious!

I think the secret of the taste is down to Gyros - a Greek seasoning mix traditionally used to flavour meats such as donner kebabs that I've only recently discovered. It adds a delicious herby flavour to the falafel, but you could replicate this with mixed herbs, chilli and paprika. I've done some research and you can pick up Gyros seasoning in the World Food aisle of larger Tesco stores and I've also found it on Amazon.

INGREDIENTS:
> 1 tin of chickpeas (drained)
> 2 spring onions
> 2 tsp gyros seasoning (or any other seasoning!)
> 1 tsp paprika
> 2 tsps flour (I prefer rice flour)
> garlic (I'm trying to use this squirty garlic up but you can use regular garlic!)
> handful of spinach

RECIPE:
> place everything but the spinach into a food processor
> blitz until all the chickpeas are broken up and resemble a breadcrumb texture
> add the spinach and blitz until it's all mixed in
> form the mixture into balls of whatever shape and size you fancy
> add to a frying pan with some oil and fry until they're lovely and crispy on the outside
> serve and enjoy!
