RECIPE | Banana and Date Loaf.

Since getting the Ms Cupcake vegan recipe book as leaving gift recently I have got so very into vegan baking. I find it so much easier than 'regular' baking, there's no creaming of butter and sugar and gradually beating your eggs and flour in, it's literally bish, bash, bosh and your done! So today I thought I'd share the recipe for a super tasty banana and date loaf that I whipped up last week. The recipe is slightly adapted from the Ms Cupcake book, so all credit for the basics of this recipe go to her...it's just so good I had to share and if you don't have her book, you are totally missing out!

Banana and Date Loaf

Prep Time: 15 minutes
Cook Time: 45 minutes

Ingredients (serves 10)
  • 250g gluten free flour (I used rice flour)
  • 100ml flavourless oil
  • 100g brown sugar
  • 50g golden syrup
  • 250ml nut/soya milk
  • 3 very ripe bananas (mashed)
  • 80g chopped dates
  • 1/2tsp baking powder
  • 1/2tsp bicarbonate of soda
  • 50-100g dairy free chocolate drops
Instructions
1. Preheat the oven to 180°C and line your loaf tin with greaseproof paper.
2. Mix the dry ingredients together.
3. Mix the wet ingredients together in a separate bowl.
4. Add the wet ingredients to the dry and quickly mix until just combined.
5. Pour the mixture into the loaf tin, tap the tin on your kitchen worktop and place in the oven for approx 45 minutes - check with a skewer and use your judgement!

I did find that due to the rice flour this loaf was verrrryy crumbly, but it was delicious none-the-less. I am going to experiment with some binders (e.g. xanthan gum or psyllium husks) in order to improve the texture, but it's not entirely needed as it's still delicious without anything added!
