Vegan & Gluten Free Peanut Butter Cookies!!

Hello there lovely people.

I recently made these amazing vegan, gluten free peanut butter cookies for a bring and share lunch at work. They are honestly so bloody delicious that I just have to share the recipe with you!! The recipe itself is from the 'Ms Cupcake - The Naughtiest Vegan Cakes in Town' book, which has some amazing and delicious looking recipes in it!!

Ingredients:
275g Peanut Butter (the creamier the better!)
125g Vegan-Friendly margarine (you could substitute for ordinary margarine/butter if you wish)
140g Maple/Golden Syrup
85g Caster Sugar
70g Brown Sugar
1tbsp Vanilla Extract/Essence
240g Rice Flour (or just regular plain flour if you're not going for gluten free)

What to do:
1. Mix together all the ingredients EXCEPT the flour, ensuring they're nicely combined
2. Mix in the flour a bit at a time
3. Spoon onto a lined baking tray (mine were approx 1/2 - 3/4tbsp each) and stamp down with a fork to make a nice crosshatch pattern.
4. Bake at 160°C for 15-20 minutes
5. Once baked, leave them to rest and cool on the tray for a few minutes before transferring to wire rack to finish cooling.

I'm not kidding when I say that these are abso-bloody-lutely AMAZING! They are so tasty, have a really nice chewy texture and they most certainly got the seal of approval from all my work colleagues. Also, just putting it out there, a cheeky bit of Nutella on the top makes them like eating a little bit of heaven!

  3. I love peanut butter and I love cookies, I'll have to give these a try :) Have you ever been to the Ms Cupcake Vegan Bakery? I was trying to encourage my group when we last went to London but no one fancied Brixton (but I wanted cake!)

    Honestly Katie, you'll never look back, they're bloody amazing. I make them when we have bring and share lunches at work as one of my colleagues is vegan and everyone battles to get to them! No I've never been, I'd love to though because the recipes in the book are amazing! My colleague is actually going on one of their baking courses which I'm sure will be amazing! xx
